Ingredients

Baby potato-800g, boiled and peeled; oil-2tbsps, sugar-1/2tsp+to taste, red chilli-2, broken; cumin seeds-1/4tsp, bay leaf-2, hing(asafoetida)-1/4tsp or to taste, grated ginger-25gms, chopped tomato-200gms, kashmiri red chilli powder-1/2tsp, turmeric powder-1/2tsp, chopped green chilli-2, a handful of chopped coriander.
Cooking Method

Step 1.  Heat oil and season with red chilli, cumin seeds, bay leaves, hing and 1/2tsp sugar. Let them brown.

Step 2.  Add ginger and stir-fry a little. Add tomato, turmeric, chilli powder, salt, sugar and 2tbsps water. Cook till tomato is soft.

Step 3.  Add boiled potato. Stir-fry over medium flame for 2-3 minutes.

Step 4.  Lower the heat. Cook covered over slow flame 10-15 minutes. Stir in between. Sprinkle chopped green chillies and coriander. Keep covered for 10 minutes. Serve with Paratha or Rice.
